Pancake muffin bites:
1 cup oat flour
3 cups (ish) water/milk – I use water
Sprinkle of sea salt (if want)
Raw cocoa = about 1 tsp
Pumpkin spice = about 1 tsp
-Maple syrup infused with cinnamon 2 tbsp
*If you don’t want to use this just add some cinnamon plus a substitute for the syrup. The one we use is about 26g of sugar per 2 tbsp so when you divide that by 12 whole cakes it’s not that bad. Plus it’s real ingredients vs. artificial ones.
I combined in blender but you don’t have to. You can just whisk in a bowl of you choose. It comes out pretty liquid which is fine.
Baked on 325 for about 25 minutes. We like ours a little on the doughy side but if you want it firmer I’d say about 30-35 minutes.
After it comes out I sprinkled coconut flakes and add a few chocolate chips.
**You could probably use vanilla extract instead of the maple syrup.

*If youbwant to increase the protein then add a scoop of whey protein and try it out. If you greese the pan don’t forget to add those calories in as well. Which typically would add about 1-2g of fat per bite if you added 1-2 tbsp of oil.
